After hearing that I'm launching Limited Edition pizzas, which will feature rare and in some cases exotic ingredients, a dear friend of mine sent me an article about the world's most expensive pizzas. He was curious whether I intended to pursue something in this vein. The answer is no. For two reasons. First (and most obvious) - the level of fame I presently enjoy doesn't support this kind of ambition. Second (and most important) - none of this stuff excites me. Not the $450 pie in Scotland, not the $1000 NY pizza with Osetra caviar, and certainly not twelve grand to have three Italian pizza makers come to your home and make you "the most expensive pie the world has ever known". I understand that this is about famous chefs, marketing angles, etc. Just as I'm confident that those pies really do taste great (though I'm not sure about real gold dust on a Pizza Royale 007 pie, which you can have at a Domenico Crolla Restaurant in Glasgow for a mere $4,500. Gold was never my favorite pizza topping). All of that is besides the point. The point is that this isn't culinary art. It's decadence at its worst and an insult to my sensibilities as a pizza fanatic. To me, pizza is a supremely democratic food, in that it embodies the values I hold dear: accessibility, sharing and inclusiveness. It's a great way to express simplicity as the ultimate form of sophistication. Pizza could be exquisite, but never pretentious. I hate to say this, but I'm not crazy about a human being who thinks he deserves to eat a $12,000 pizza, or a $1000 pizza for that matter. When you serve someone like that, you are not satisfying their taste buds - you're feeding their grotesquely oversized ego. And that's why I would never want to be the guy who makes that kind of pizza, or serve a guy who eats that kind of pizza. In conclusion I would like to assure everyone that my Limited Edition pizzas are going to be priced sanely, though I'll do my best to make them insanely tasty:))
